The Sommelier/Beverage Manager creates a vibrant, hospitable and well-managed beverage & wine program in alignment with the vision of the restaurant. Builds and maintains a welcoming and dynamic experience for our three stakeholders: the guest, the team, and the business. Ensures the bar exceeds expectations for organization, efficiency, cleanliness and quality. Drives sales, beverage education and service standards and effectively manages beverage costs and inventory.


CORE DUTIES & RESPONSIBILITIES


Leadership & Culture

Sets the tone and energy of the beverage program. Manages all moving parts of the bar with grace and ease. Learns and implements sales strategies to motivate the team. Uses our company values to make decisions within the department. Creates a culture of continuous learning behind the bar. Improves and streamlines all processes around beverage service. Develops educational programs for wine, spirits and beer. Responsible for ensuring that the wine and beverage sales forecasts are met. Desire and capacity to evolve within an ever-changing and dynamic environment. Embodies overflowing hospitality.

Team Development

Hires, trains bar candidates and provides beverage education to entire service staff.  Provides a service team with accurate, approachable, and engaging information about our wine menu, cocktails and spirits list to our guests. Present leadership on the floor to motivate, coach, and mentor our employees to drive sales goals and elevate the guest experience with your expertise. Expects creativity from the bar team to create seasonal menus. Recruits great talent for the bar who embody enthusiasm and TPG values and Aventura spirit. Sets clear expectations. Documents staff performance that doesn’t meet standards.


Operations

Promotes good vendor relationships and meets with them weekly. Regulates produce orders and rotations, order Airgas and monitor CO2 stock. Ensures opening and closing procedures are handled properly, and efficiently. Take ownership for each aspect of our operation including cellar upkeep and overall bar cleanliness that meets with Health Code Standards. Explore opportunities to add value to the location. Uphold policies and SOPs. Implement and maintain productivity, quality, and hospitality standards. Develops programs, events and new ways of promoting beverage programs. Ensures that all beverage inventory is stored properly and accounted for following company policies and guidelines and cocktail recipes are followed with exact measurement procedures. Responsible for proper use and maintenance of all glassware and other operational equipment. Attend weekly operational meetings to ensure effective coordination and cooperation between all departments.


Maintains an always-accurate, complete wine list including prices and vintages. Ahead of the ball with edits, notifications about list changes, and takes ownership of list maintenance.


Salesmanship

Provide excellent guest service and wine salesmanship tableside, including in peak services (weekends, holidays, special events). Always seeks opportunities to deeply engage with our guests and create transformative guest experiences. Educate our sales team and guests on Spanish wines and culture, upcoming events, and special relationships. Is a key stakeholder in the success of monthly wine dinners and events. Acumen in appraising sales performance of staff. Ability to mine data and analyze trends in server sales. Proactive in problem solving and finding opportunities for more efficient sales. Ensures that the staff is confident in promoting our premium products.


Bar Atmosphere

Exudes hospitality and intention and inspires others to do the same. Monitors and evaluates food, beverage, and service constantly. Build relationships and create repeat guests. Keep current on local competitors, industry trends and opportunities. Bring ideas to the team on ways to keep our bar vibrant and guests interested. Effective performance management and guidances of all sales staff.


Financials

Innovative on how to control costs while maintaining high standards of quality and service. Understands financial reports and the variables under your control. Uses data to make corrective actions to bar operations to achieve sales goals and optimize labor efficiency. Ensure we are making informed choices and managing bar inventory. Assist in developing preferred supplier lists – review and take corrective action if necessary. Strives to meet our target cost of sales for the dining rooms as determined by the company budgets. Make recommendations for pay increases, promotions or other incentives where appropriate.


Safety & Sanitation

Maintain safe, secure, and healthy facilities by establishing and enforcing sanitation standards, health department regulations and procedures and maintaining security systems.

Requirements

2+ years of experience in a similar position

Certified Sommelier


Compensation Details

Compensation: Dependent on Experience | Starting at $55-$60k with an attractive commission after 3 months of employment
